Methods for Assessing Ghee Quality

Aroma Testing

To test the quality of ghee’s fragrance, gently warm up a small portion of ghee.  The ghee should exude a pleasant nutty aroma while heating up and if it smells unpleasant or rancid it might be spoiled.

Lab Testing  

Very critical and important step. Laboratory assessments can offer profound insights into the quality of clarified butter beyond just sensory evaluations and is a must have element for regulatory bodies to ensure commercially available products adhere to the established product safety baselines. However, passing bare minimum regulatory standards can’t be considered as the epitome of purity either. The term “purity” is a broad spectrum, and many commercially sold products may not meet the purity standards they claim. Moisture Content: High grade ghee should contain moisture levels below 0. 4% aiding in prolonging its freshness and preserving its taste. 

Reichert-Meissl (RM) Value: Indicates the presence of volatile fatty acids, with an ideal range of 24-34 for high-quality ghee.

Butyro-Refractometer (BR) Value: Assesses the refractive index to confirm the purity of the ghee, with a range of 40-43 considered ideal for pure ghee.

Adulteration Testing: Ensures there are no non-dairy fats or oils mixed with the ghee.

Iodine and Saponification Values: These tests further gauge the types and amounts of fatty acids present.

Pesticide Residue Testing: This ensures that the ghee is free from harmful chemicals and meets stringent organic standards like USDA Organic, EU Organic, and Indian NPOP. The total unique parameters can be upwards of 700, including Heavy Metals testing. [As of this writing, Dharma Naturals is the only known producer in India, and possibly the world  meeting such a benchmark for Indian prized breeds such as Gir, Sahiwal and Rathi].

That’s because thorough testing can be expensive, and some producers avoid it to sidestep being flagged by regulatory bodies for failing certain standards. As a consumer, especially when buying premium organic products, it’s important to go beyond the label and really investigate the claims being made to ensure you’re getting what you’re paying for. Don’t just take purity claims at face value—make sure they’re backed by a genuine lab report from a recognized, accredited lab and not just any lab. Ensure the lab is registered and governed by the regulatory bodies in its jurisdiction. For example, USDA, and FDA in the US;  EFSA, DG SANTE in EU;  FSA in the UK; BVL in Germany; DGAL in France;  FSSAI and NABL in India and so forth.

Select High-Quality Ingredients

It’s another critical step that separates any ghee from ‘pure’ ghee, and ‘ultimate pure ghee’. The top quality ghee is crafted using the butter sourced ideally from cows that are only grass fed. The butter obtained from grass fed cows contains high levels of Omega 3 Fatty acids and various fat soluble vitamins such as A,D,E and K compared to their corn-fed or grain-fed cows. Additionally it is packed with antioxidants like beta carotene that contribute to the richness of ghee. Traditional techniques like the Bilona hand churning method uses cultured yogurt to separate the butter to retain these nutrients and ensure a premium quality product. The same can’t be said about butter obtained directly from machine made ‘cream separators’. Hence, you will often see the price difference between hand churned Bilona method vs machine made butter or Ghee. Furthermore, traditional Yogurt making methods used in Bilona use clay pots with overnight slow heat to make the yogurt in-order to fully retain the nutritional values of the butter. 

Taking the notch even higher are producers who value ‘Ahimsa’ ie non-violence practices, where cows are not harmed forever allowing them a stress-free life for even purer toxic free milk (stress can trigger stress inducing hormones that impact milk quality).  There aren’t that many producers left who value this much compassion and love for the cows and purity. The average lifespan of a cow is usually 20-22 years if healthy, out of which it is only productive half of its life i.e. 10-12 years.  Hence, in order to raise a cattle with proper Ahimsa practices, the producer will bear the costs of taking care of the cattles for extra non-productive 10-12 years. As you can imagine, it is a VERY costly affair for the producer, and the core reason as to why many producers just chose not to do it. They think it to be just cost prohibitive.

In-order to maintain the freshness of ghee for a period of time it should be tightly sealed in a glass container and stored it in a cool and dry place away from direct sunlight exposure and moisture. Ghee already has a decent shelf life at room temperature due to its low moisture content. However,  refrigeration can further prolong its freshness should you wish to do so. It is important to note that refrigeration may alter the flavor, aroma and texture of ghee by making it firmer and less creamy in consistency. For this reason alone, many Ghee enthusiasts and traditionalists prefer to enjoy it at room temperature without any refrigeration or microwave.
